This one comes from the Pico Congolon range in western Honduras, tucked between two biological reserves. Two farmers grew it — Silvestre Vasquez and Joel Lopez. Joel's farm, Los Lesquines, has been in his family since 1865.
Washed process, organic, grown between 1,400 and 1,700 meters. We roast it medium-light to keep what the altitude gave it: lemon and lime up front, cocoa and nougat underneath, a soft black tea finish.
Pour-over, drip, batch brew, and espresso. An all-rounder coffee. Good first cup of the day.
